PINK PANCAKES

Pink Pancakes, Oh my!  Every little girl needs to wake up to pink pancakes topped with blueberries....but not with artificial food coloring, with Beets.  Yes, you did read that correctly.. beets!  Beets are surprisingly sweet and mix very well in homemade pancakes.  Little boys love pink pancake too, but stay tuned for tricks on making green pancakes too.

Keep it simple:
Ingredients:
4 beets
3 ripe bananas
2 eggs
3 cup rolled oats (do not use quick oats or steal cut oats)
1/2 cup ground flax seed
2-3 Tbs of honey
splash of milk if needed


Roast the Beets:
Roasting beets are super easy! Wash the beets and cut off the leafy part. Wrap the beets in foil and bake on 400 degrees for 1 1/2 hours... Let cool, then the skin will peel right off. Cut into smaller pieces and puree in food processor. Set aside


Pancake Mix:
puree the bananas
add all other ingredients and puree until smooth. Add the beets back in and puree.

Heat griddle and pour. Top with a honey and blueberries.
